100% Melon de Bourgogne. Pépière has vines in a couple of different zones of the cru of Monnières-St.-Fiacre (including the lieu-dit of Gras Moutons which is separately bottled). The site for this bottling features 60-year-old vines on fine, sandy, gneiss-rich soils. As for all Pépière vines and wines, the farming is organic and the harvest and all work by hand. The fruit is direct-pressed in whole clusters and the juice settled naturally for 12 hours. It is then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees for 2 to 2.5 years in large underground vats. It is bottled without fining or filtering.
