It's a blend of 70% Mandó and 30% Arcos that fermented in stainless steel with some 30% full clusters and then matured in tinaja. It has a moderate 12.5% alcohol and mellow acidity, subtle and elegant. It feels more like the 2019 than the 2020, despite the climatic conditions of the year. • Safrà is a blend of Mandó, an indigenous grape of this part of Valencia, with a small amount of another indigenous variety, Arcos. • 600 meters elevation. • Hand harvested, natural yeast fermentation in tank and stone lagars, gentle maceration. • 6 months in 28HL subterranean amphorae.
