The nose of the 2021 Finca La Habanera Listán Blanco shows more complexity and depth, with the freshness from the higher-altitude vines, and comes through as mineral and vertical, austere but clean and pure, tasty and salty, with notes of flowers. It was bottled unoaked after four months with lees. 2,300 bottles were produced. It was bottled in June 2022.

• 100% Listán Blanco (Palomino). • Sourced from ungrafted centenary vines in the prized Finca la Habanera. • 600-700m altitude and up to 40% grade. • Volcanic mother rock with thin clay topsoil. • Fruit is direct-pressed and the must is vigorously oxidized (“black chard” style). • Fermented with indigenous yeasts in tank. • Elevage of 3-4 months in tank with lees stirring.
