23 is a masterpiece, the flagship of DASSAI Blue. It is suitable for DASSAI Blue's concept of 'Blue comes out from indigo and is bluer than indigo'. This is a sake worthy of surpassing DASSAI made in Japan. It uses Yamada Nishiki, known as the king of sake rice, polished down to 23% (77% is removed). It has gorgeous aroma like a bouquet of flowers and fruity like a pear, thus it is complex and refreshing. Elegant in texture, yet powerful, with a long and a pleasant aftertaste.

Region: New York

New York state has a wine history which stretches back to the mid-17th century, when Dutch settlers first began cultivating grape vines in the Hudson Valley. Since then, the wine industry of New York has grown from strength to strength, mixing the old with the new as wineries continue to experiment with modern techniques alongside their traditional heritage. Indeed, certain wineries in New York state hold a claim to being amongst the oldest and most well established in the New World, with at least one dating back over three hundred and fifty years. New York state is responsible for a relatively small range of grape varietals, due to its cooler, damper climate, but many varietals such as Riesling and Seyval Blanc thrive in such conditions and produce wines a of singular quality.

Country: United States

Whilst there are several strains of native grape varietals in the United States, it was the introduction of the European species which prompted the country to begin producing wines on a large scale. Over the past few centuries, experimentation and cross-breeding has produced great successes in regards to the quality and suitability of the fruit grown in states such as California, Oregon, Washington and New York, and the past few decades have seen New World wines from the United States reach much higher standards. Arguably the finest United States wines have always come out of California, where the climate and terrroir is most suitable for fine wine production. The masterful blending of classic grape varietals such as Cabernet Sauvignon and Merlot, amongst others including Syrah and Chardonnay, have had world beating results in recent years, prompting many to suggest that there has never been a better time for buying and drinking United States wines.
