Overall, this is a relatively dry and lean take on orange liqueur, with the citrus dialed way down. A mild cinnamon fragrance is echoed on the palate, alongside vanilla, chamomile tea and cedar, with fleeting honeyed sweetness and a spiced exit that hints at bergamot.
Winery
It’s designed for the margarita, but mixes especially well with brown spirits. We start with a mix of neutral cane spirit (white rum), neutral grain spirit (vodka) and an aged 2 year French brandy. We move this into tanks and add three types of dried orange peel- a sweet orange from California’s Central Valley, a bitter Laranha orange from Curacao and a Seville orange from Spain. We add in coriander, hibiscus, and vanilla. We finish it with a turbinado simple syrup made with brown sugar, a little cane sugar and agave nectar for mouth feel. It’s about 30% sugar- a rich, thick sweetness. This is the first time we have used glycerin and we add in a vegetable based one at about 1%.

Washington state currently holds host to over six hundred wineries, each producing wines using the many classic grape varietals which flourish in the arid, dry region to the east of the Cascade mountains. Since the Washington wine industry began in the beginning of the 19th century, great efforts have been made to irrigate the semi-desert which makes up much of the state, and the results have been enormously successful in regards to creating an environment in which a wide range of grapevines can flourish. There are certain fine wineries in the wetter western region of Washington, although these make up less than one percent of the region's overall wine production levels. Recent decades have seen red wines becoming increasingly popular in the United States, and many of those produced in Washington are considered to be amongst the country's finest produce.

Oregon, Washington State and New York have all developed sophisticated and technologically advanced wine cultures of their own, and the output of U.S wineries is increasing each year as more and more people are converted to their produce.
