Like the white Chora from L'Acino, this wine comes mainly from L'Acino's younger vines, planted on a sandy hillside from old-vine massale cuttings in 2007-2008; a 50-year-old parcel has been added into this wine in recent times. The certified-organic fruit is harvested by hand, partially destemmed, crushed and fermented in stainless steel tanks with native yeasts and without sulfur with a one-week maceration . The wine is aged in tank for a year and bottled unfined and unfiltered with a small amount of sulfur in the spring following the vintage.
